STRAWBERRY BREAD:
3 cups flour, sifted
1 tablespoon cinnamon
1 teaspoon baking soda
1 teaspoon salt
2 cups sugar
2 cups strawberries, sliced thin
4 eggs, beaten
1 1/4 cups cooking oil
1 1/2 cups chopped nuts, optional

Preheat oven to 350 degrees. Stir all dry ingredients together in a large bowl to mix them well; then make a well in the dry ingredients, and add the berries, eggs and oil, (and nuts, if desired). Stir gently just until mixed. Do not over-stir the batter!! Pour into 2 greased and floured 9 x 5 inch loaf pans. Bake for 1 hour at 350 degrees. Cool for 5 minutes in pans, then turn onto cooling racks. This sweet bread freezes quite well and is delicious toasted with cream cheese.
